Back to BlogsThere is something magical about the aroma of slow-roasted spices and tender beef simmering on a lazy afternoon. For many of us, Beef Bhuna isn’t just a dish; it’s a memory.
Whether it’s the centerpiece of a festive family gathering or a comforting weekend meal, this classic South Asian delicacy holds a special place in our hearts—and our kitchens.
At Roshoon, we believe that the best food comes from patience and tradition.
Today, we’re sharing a simplified yet authentic recipe so you can bring that rich, "bhuna" (slow-fried) flavor to your own dining table.
What Makes it a "Bhuna"?
Unlike a standard curry, a Bhuna involves sautéing the meat in spices with very little water.
This process allows the meat to cook in its own juices, resulting in a thick, dark, and intensely flavorful gravy that clings to every piece of beef.
Ingredients
Beef: 1kg (cut into small cubes, preferably with a little fat for flavor)
Onions: 2 cups, thinly sliced
Ginger & Garlic Paste: 2 tablespoons
Whole Spices: 2 bay leaves, 3-4 cardamom pods, 2 cinnamon sticks
Ground Spices: 1 tsp turmeric, 2 tsp chili powder (adjust to taste), 1.5 tsp coriander powder, 1 tsp roasted cumin powder
Oil: ½ cup (mustard oil is traditional, but vegetable oil works too)
Garnish: 4-5 green chilies and a pinch of Garam Masala
Preparation Steps
1. The Aromatics
Heat the oil in a heavy-bottomed pot. Add the whole spices (bay leaves, cardamom, cinnamon) and let them sizzle for 30 seconds. Add the sliced onions and sauté until they turn a deep golden brown.
2. Building the Base
Stir in the ginger-garlic paste and cook for a minute. Add the turmeric, chili, and coriander powders with a splash of water to prevent the spices from burning. Sauté (bhuna) the masala until the oil separates from the spice mix.
3. The Slow Cook
Add the beef cubes and salt. Stir well to coat every piece of meat with the spice base. Cover the pot and cook on low-medium heat. The meat will release its own water—let it cook in these juices for about 20-30 minutes, stirring occasionally.
4. The Finishing Touch
Once the water has dried up and the beef is tender, add the roasted cumin powder and green chilies. Continue to stir-fry for another 5-10 minutes until the gravy reaches a dark, rich consistency. Sprinkle a little garam masala on top, cover, and turn off the heat.
Serving Suggestions
Beef Bhuna is best enjoyed with steamed Basmati rice, hot parathas, or even Pulao. Add a side of fresh cucumber and onion salad to cut through the richness.
